Why prick potatoes with a fork?

Pricking or piercing the potatoes with a fork before smoking or baking allows the steam inside the potato to escape, leaving you with a light and fluffy baked potato. It also reduces the risk of potatoes exploding in your smoker or grill. We recommend poking each potato 8 to 10 times evenly across the entire surface.

When are smoked baked potatoes made?

A baked potato is ready when its internal temperature reaches 93-99°C(200-210°F). At this temperature you can shove a fork into the potato without much resistance. The inner flesh of the potato should also be fluffy. Use a digital thermometer to accurately measure the temperature of the potatoes.

Because potatoes can vary in size and texture, there is no set time for smoked baked potatoes. Sometimes it only takes two hours and sometimes even four.

Quick tips

  1. Do not wash potatoes first. Washing them before you need them can result in moisture becoming trapped in the bulges(or “eyes”) of the potatoes, which can cause them to spoil.
  2. Don’t forget to apply a thin coat of olive oil to the potato skins before smoking. This will crisp up the skin, a nice contrast to the fluffy flesh inside the potato. The oil tooth also acts as a glue for the grill mix.

Ingredients

  • 4 medium red potatoes
  • 2 tablespoons olive oil
  • 2 tablespoons barbecue sauce

  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 4 tablespoons diced chives
  • Optional crumbled bacon
  • Optional shredded brisket

Instructions

  • Turn your smoker on at 121°C(250°F). If you are using a charcoal grill, be sure to set it to 2-zone indirect grilling.
  • Prepare your potatoes by washing them well and scrubbing to remove dirt. Before each potato with a multiple fork, everywhere.
  • Apply a thin layer of olive oil to the potatoes. Next, apply a generous amount of BBQ rub to each potato.
  • Place potatoes on smoking racks. Close the lid and roast for 3 to 4 hours, or until the internal temperature is 93 to 99°C(200 to 210°F). At this point you should be able to insert a fork into the potato with little resistance.
  • Remove the potatoes from the smoker and serve immediately with toppings of your choice.
