Ingredients

  • 4 large boneless skinless chicken breasts
  • 3 tablespoons olive oil

BBQ rub dry

  • 1 tablespoon thyme
  • 2 tablespoons chilli powder
  • 2 tablespoons cayenne pepper
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 tablespoon of kosher salt
  • 2 tablespoons ground black pepper

Instructions

  • Turn on the electric smoker at 107°C(225°F). Place apple, peach, or cherry wood chips in a smoker pan or box.
  • Brush the chicken breasts with a thin layer of olive oil. Combine all the dry ingredients to rub into a little pain. Apply dry seasoning to each breast, spreading evenly over all sides.
  • Transfer the breasts into an electric smoker. Close the door and grill until the internal temperature reaches 71°C(160°F), about 1 hour.
  • Remove chicken breasts from smoker and place on cutting board. Cover with foil and let stand 5 to 10 minutes or until the internal temperature reaches 74°C(165°F).
  • Serve whole or sliced.
