Ingredients

  • 4 peaches , halved and stoned
  • 4 heirloom tomatoes, diced
  • 1 bunch coriander
  • 2 limes in juice
  • 2 garlic cloves chopped _
  • 2 tablespoons olive oil
  • Kosher salt to taste
  • Ground black pepper to taste

Instructions

  • Preheat your grill to high heat. Let warm up for 10-15 minutes.
  • Brush the fleshy sides of your peaches with olive oil. Sprinkle salt over the meat surface.
  • Place the peaches on the grill, flesh side down. Cook for 10-20 minutes, or until browning from the grill is visible in the flesh.
  • Remove peaches from grill and place on cutting board. Let them cool for a few minutes and then cut them into small pieces.
  • Transfer the pieces to a great pain. Add the diced tomatoes, chopped cilantro, lime juice, chopped garlic and olive oil. Mix well. Add salt to flavor. Add more lemon juice if it’s too salty.
