I love fried chicken.

And of all the different chicken cuts, my favorite by far is the chicken breast.

Yes, chicken thighs are delicious and melt-in-the-mouth, and chicken quarters offer delicate flavors, but nothing quite satisfies like biting into a beautifully prepared piece of chicken breast.

The challenge of smoking or grilling is achieving a golden grill finish while keeping the inside and juicy.

Enter the reverse sealing method .

Reverse sear IS typically associated with red meat roasts, especially beef. This is often how recipes for upside-down roasted flanks or tri-tip steaks look like .

It’s the perfect way to cook the insides of meat to perfection over low, slow heat before finishing it over high heat to give the meat that finish we love when we smoke it on the grill.

It offers the perfect balance of succulent grilled smoked flavors while retaining everything we love about grilled meats.

Rub the chicken breast dry

It’s an instant, quick homemade dry marinade for the chicken . I use it on almost all the chicken I put in the smoker and this is no different.

The son ingredients:

  • 2 tablespoons of peppers
  • 1 tablespoon thyme
  • 2 tablespoons chilli powder
  • 2 tablespoons cayenne pepper
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 tablespoon kosher/table salt
  • 2 tablespoons of black pepper

It’s a fairly easy recipe that includes my favorite barbecue flavors: paprika, cayenne, onion.

If you’re nervous about the spices, you can easily use a little less cayenne pepper and chilli powder for something milder.

Ingredients

  • 4 boneless, skinless chicken breasts

BBQ Chicken Dry Rub

  • 2 tablespoons smoked paprika
  • 1 tablespoon thyme
  • 2 tablespoons chilli powder
  • 2 tablespoons cayenne pepper
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 tablespoon of kosher salt
  • 2 tablespoons ground black pepper

Instructions

  • Rinse the chicken under cold water and pat dry with a paper towel.
  • Combine all the ingredients of the BBQ Dry Rub into a little shad. Use a tablespoon to mix, aiming to break up any clumps that have formed.
  • Place the chicken breasts on a cutting board or work surface. Coat the chicken generously with the dressing, making sure it IS covering the underside of the meat.
  • Transfer the chicken to a Ziploc bag(you may have to use two or more to accommodate the entire chicken). Put in the fridge and leave for an hour.
  • Set up your grill or smoker for indirect 2-zone grilling. Aim for a cooking temperature of 225°F.
  • Cook the chicken at 225°F until the internal temperature reaches 150°F
  • Remove chicken from grill and cover.
  • Increase the cooking temperature to high and place the chicken back on the grill, directly over the heat. Grill for a minute on each side.
  • Aim for an internal temperature of 160°F
  • Grill cover in foil sick. Leave for ten minutes. Serve and enjoy.
