Grilled strips of steak served with green and red peppers on a baguette topped with melted cheddar cheese

I love finding new ways to prepare well-established recipes and I think the grilling of the steak here offers something different than the takes I’ve had in the past.

As always, the key to maximum flavor is trying to get a good piece of steak in the first place.

What’s the best steak for Philly Cheesesteak?

We all often have the habit of choosing a thick, meaty steak, but for the purposes of this recipe, let’s go against the style and choose something lean instead.

We need the meat to cook quickly and easily cut and dice. We will serve the meat in 2.5 cm thin slices so that something thick cannot cut it.

I’ve seen a few other recipes that interest you of grinding beef to make a ground beef-like filling, which you can do with a manual meat grinder. Since I want to stay as true to my understanding of traditional cheese steaks as possible, I decided on steak slices. If you have leftover steak, this will work, but may lack some of that rich, meaty flavor.

What equipment do you need?

Rather than grilling the whole steak and then slicing it, I want to make sure we’ve cooked it as evenly as possible.

To do this, I want to first slice and then grill.

The problem with this approach is that small pieces tend to slip through the cooking grates and land on our flames or propane burners. It’s not ideal.

We also need a flat surface. If you have a flat top grill , you can just work with it. If you don’t, I recommend getting a pan that’s compatible with your outdoor grill.

If you’re not sure what to buy, take a look at the Weber Gourmet BBQ System Grill. It’s a flat surface that’s easy to use on any grill and works by evenly transferring heat to the surface of the pan.

Quick tips for the perfect cheesesteak

Here are a few quick tips to help you cook the best Philly Cheese Steak possible.

Cheddar cheese

I’ve listed English cheddar cheeses here because I find they grate quickly and melt easily. You can really use any cheese you like here. I personally think the key here is to choose something that melts well, but I’m such a fan of cheese that I’ll forgive you if you choose something else!

Mushrooms

I haven’t listed any mushrooms here, but I know many people who like to add them. I don’t mind (I love mushrooms), but I didn’t want to overload these sandwiches.

Plus it gives me more room for steak and cheese!
